I swear, never a nem had made that noise when I crunched it. I'm still thinking about the crispness and finesse of the dough ... Same as the Vietnamese ravioli: well stuffed, and a delicious dough. But the best was the dish of the day: a kind of meat curry with carrots and christophines. Of incredible finesse. Dessert, my favorite: tapioca pearls in coconut milk with mango pieces. There, little disappointment, because it was served cold. The place is very small, you have to arrive early or book. And you have to wiggle and disturb your neighbors to access their place!
